No new recipes in August! Unless you count this Fruity Pebble sourdough I made that was truly mediocre and ended up being tossed because the other sourdoughs I made were better. I was a little distracted being laid off and realizing how burnt out I was, which is also why this is showing up weeks later than usual. I was pleasantly surprised to see that I had started this, when I came here to start the post for September’s meals. Onward!

Revisited Recipes

Spicy shrimp tacos – I love this recipe so much. The sauce, in particular, is delicious and it all comes together very quickly. The seasoning on the shrimp is also quite flavorful. Every time I make this, we’re tempted to put it on the meal plan for the week after, as well.

Thai basil chicken – You know, I’ve never actually made this with chicken thighs? To keep it easy, I use ground chicken, instead, which cooks quickly and requires zero prep in advance.

Easy Massaman curry – This is a favorite of my husband’s, and is truly as easy as it claims in the title. For this one, I do use chicken thighs, but follow the rest of the recipe as indicated.

Thai peanut quinoa salad – Someday, I will remember to put in the chow mein noodles on demand, rather than dumping everything in the giant bowl that this ends up in. I didn’t this time, however, and so we once again got the squishy noodles on day two. For this, I grilled some chicken thighs and chopped them up to add to it.
