
You know, I didn’t think I would have anything to say about recipes this month, because we spent almost the entire month traveling, but in the last week of my sabbatical, I ended up going a little nuts making various dessert items because I was so excited to be able to cook again and wanted to try some new recipes. So here we are!
New Recipes
Mini mango lassi cheesecakes – Someone on Reddit posted a mango lassi cheesecake that looked amazing, but they didn’t post a recipe, so I went looking for one. I found these instead; they were delicious, but didn’t really set well and were more of a pudding by the time they had an overnight in the fridge. Still, a delicious experiment!
Marshmallow chocolate chip cookies – Originally, I was going to make a chocolate chip cookie recipe I found on Reddit. But when I went looking for chocolate chips in my pantry, I found six bags of marshmallows before I found a single bag of chocolate chips. So I pivoted and looked up this recipe, which turned out great.
Dairy-free horchata – Horchata is supposed to be made without dairy. Horchata is supposed to be water, rice, sugar, and cinnamon. And yet! I cannot get it at Mexican restaurants, because inevitably, it’s made with milk. After another such situation, I finally cracked and decided to make my own. It was delicious and easy, but I need to buy more cheesecloth.
Revisited Recipes
Steak and kimchi fried rice – I realize, as I look at this actual recipe, that I haven’t made this recipe in a long time, even though it’s always what I look at (the link in my recipe spreadsheet) when I think of making it. Really, I just cook steak with salt and powdered ginger in a pan with olive oil, pull it out to rest, put the cooked rice into the pan with a bunch of kimchi and periodically pour the juices from the resting steak back into the rice as I fry it with the kimchi. Authentic? Maybe not, but it’s fast and it tastes good.
