April was a good eating month! We had some great food on vacation, tried a new recipe at home, and resurrected some good old recipes, as well. Unfortunately, I apparently took zero pictures of any of the food I made in April, so what I have to offer as a cover image is a beer I drank in a bar. Go figure.

New Recipes

Kielbasa and sauerkraut – We ended up making this twice because it was so easy and good. I used Dijon mustard the first time and whole grain mustard the second time – I thought I would prefer the whole grain mustard, but I found the Dijon punched through more. I added red onion each time.

Revisited Recipes

Roasted lemon chicken thighs and potatoes – This one is so easy and so delicious, a true sheet pan meal with absolutely minimal preparation needed. I use boneless skinless thighs by habit.

Slow-cooker stroganoff – It has been a veeeeeery long time since I made this, and it was done at the request of my daughter. Interestingly, my youngest also liked it, so it will probably show up again in the near future.

Pasta carbonara – A good option for evenings when my husband doesn’t eat with us, as he can’t have chicken eggs, I replace the bacon with pancetta. I prefer it to the slight sweetness found in bacon.

30 cloves garlic chicken – This is one I also made twice in April, after remembering how easy and delicious it is. The sauce cooks down so nicely and is delicious with some sourdough.
