Hey, I made new recipes this month! Unfortunately, I didn’t take pictures of either of them, so everyone gets to enjoy this turtle-shaped sourdough I accidentally made after having to leave the dough in the fridge for four days while I waited for the replacement igniter to my oven to come in.
New Recipes
Irish Coddle – I cut a lot of corners on this recipe and it still turned out well, so I’m definitely going to make it again and do it correctly at some point. I only ended up cooking it for 2 hours, and I didn’t put quite the amount of onions in it that it called for.
Pupusas de chicharrón – Correctly making pupusas is a white whale I have yet to spear. While the vast majority of the flaw in this recipe is with my own handling of the masa, I also didn’t love the flavor of the filling and will looking for a different one next time.
Revisited Recipes
Peruvian grilled chicken sandwiches – This is kind of a funny recipe to me, since it lives on the website of a maker of potato rolls, but it’s a solid recipe and one that everyone in the house enjoys. The sauce is particularly nice.
Lasagna roll-ups – Another household favorite, the only downside to this recipe is that it makes 4 servings. Someday, I’ll double the recipe and have leftovers for the week.
Spicy shrimp tacos – This is another one where the sauce is half of the show, matching well with the heavy-handed spicing of the shrimp.
