Awkward. Not only did I not make a new dish in December, despite professing that I would work some into the rotation, but I also didn’t take any pictures of the food I did make, other than this ciabatta that bubbled up nicely for some mortadella sandwiches we had. Maybe this month will be the month I make some new things! My husband did make a new recipe, so consider that a guest partial post for this month.

New Recipes

Pistacchio pesto – When we were in Bologna this summer, we enjoyed some delicious mortadella sandwiches. Pistacchio pesto featured heavily in the area, so we decided to recreate the sandwiches as best we could. We bought some DOP mortadella, I made the ciabatta featured above, and my husband made this pesto. It was delicious and really enhanced the sandwiches.

Revisited Recipes

Ligurian chicken – I was excited to make this recipe again, only to discover that the olives I bought and used last time had molded. I’ve never had olives mold before? Super weird. In any case, without the salt from the olives, I added some salt to compensate, and it otherwise turned out delicious. I still prefer it with the olives, however.

Stromboli – This is a fast, easy one that is not filling enough to feature frequently in our dinner rotation, but occasionally fills in when we just want something that can be made quickly and with no fuss. It’s about half an hour from prep to finish.

Gnocchi, asparagus, and prosciutto – Prosciutto is one of my favorite cured Italian meats, and asparagus is one of my favorite vegetables, so this is a slam dunk any time I can get it on the meal plan. Someday, I’ll make my own gnocchi for this, but for now, the store bought works fine.
