The month of October got away from me! Usually I have a post a week queued up, and I work on this recipe roundup post throughout the month as I’m making the meal plan each week or executing some of the dishes and want to jot my thoughts down on them. But here it is, the end of October, and I’m only just starting this, and I missed finishing the post I intended to post last week. In this case, I’ll blame work and a packed personal schedule. Luckily, I use Google Docs to make the meal plan each week, so filling this out is made a little bit easier by looking back in the history.

New Recipes

Bacon Brussels sprouts butternut squash pasta – A suggestion from my daughter, who found it on Pinterest. I really struggled with the timing suggested – the butternut squash cooked much faster than the rest of the vegetables and bacon, while both the bacon and the Brussels sprouts needed more time (or potentially higher heat) than the recipe called for. Next time, I’d put the butternut squash in the oven partway through.

Revisited Recipes

Creamy potato soup – This is an easy classic in our household, which comes together quickly and costs almost nothing to make. I use Fairlife whole milk in place of the heavy cream, and pile it with cheddar cheese once it’s ready.

Copycat Mexican pizza – Much to my family’s dismay, there’s nothing I love more than substituting deep frying food with spraying the hell out of it with nonstick spray and putting it in the convection oven. The first round of flour tortillas got burnt because I forgot to set a timer and got distracted, but the second round turned out well.

Paleo chili – Whenever I want something easy, low calorie, and with lots of vegetables, I break out this recipe. You can really add almost any vegetable you want to it, but we tend to stick with onions, squash, tomatoes, and carrots.
